POPL The Noma Burger Gets a Permanent Location in Copenhagen

The summer’s hottest pop-up turned into a permanent restaurant! That’s right, in December 2020 the world-famous Noma burger made a triumphant return as POPL Burger, in the old venue of 108 on Christianshavn. After the burger pop-up ended this summer, we heard rumors around Copenhagen that the old 108 space would house René Redzepi’s new burger bar, and that the space that was previously The Corner at 108 would become a second location of Hart Bageri. Well, the rumors were true – Hart Brød + Bar officially opened on November 15th, and the new burger bar opened just a few weeks later, on December 3rd.

The POPL Burger

The signature burger is a Danish dry-aged beef patty is brushed with a glaze of beef garum, and topped with cheese, onions, and pickle mayo, and served on a potato bun from Hart Bageri. The flavors are fairly simple – the Noma chefs use beef garum to pump up the umami notes and enhance the beefiness of the burger, but other than that, it’s delicious because it’s made with organic, high-quality ingredients. POPL also serves a veggie burger, a quinoa tempeh patty fried in smoked vegan butter and glazed with fermentation liquids (soya and garum) that takes days to prepare. You can get the beef burger with or without cheese, and the plant-based burger as either vegetarian or vegan.

Also on the menu are seasonal sides – “The Roasties” (fries cooked in beef fat), a gem salad with buttermilk and rose dressing, light coleslaw with mint leaves, deli-style pickled cucumbers, fermented mild chilies, oxtail broth with chives, and the POPL pickleback (a shot of organic rye whiskey with a pickle juice chaser). For dessert, POPL serves a chewy cookie, a slice of rainbow ice cream, as well as soft serve with either butterscotch caramel or grated Mexican chocolate as a topping.

The name POPL is inspired by the poplar wood (which ties back to Noma’s connection with nature), and also by the Latin word “populus,” which means a community of people. The POPL team are all trained Noma veterans – Line Kleppe is the general manager, Andrea Lasàgna is the restaurant manager, and Stuart Stalker is the head chef.

POPL is open Thursday – Monday for dinner (from 4:00 pm to 10:00 pm) and Friday – Sunday for lunch (from 12:00 pm to 3:00 pm). Reservations are available for parties of 6 or more, otherwise it is walk-in only. Take-away is also available.
