Jægersborggade is the original location of the Coffee Collective – a collaboration of baristas who run four high quality coffee bars in Copenhagen. These guys have set the standard for how a Danish light roasted coffee should be made for 10 years. Sometime during May 2017, they moved their shop from Jægersborggade 10 to number 57, at the North-Eastern corner of this busy and bustling street. The new shop is a lot bigger than the old one and decorated as a beautiful designer-style Copenhagen apartment. I loved the charm of the previous spot, but I can also understand the need for more space. It’s a damn popular place after all.

The Specialty Coffee Community
Founded by the three guys Peter Dupont, Klaus Thomsen, and Casper Rasmussen in 2007 (their first shop opened in 2008), the Coffee Collective today employs more than 25 people across four stores in Copenhagen. Both Thomsen and Rasmussen have competed in multiple competitions and can pride themselves with titles like World Barista Champion and World Cup Tasting Champion respectively. As part of the specialty coffee community, also referred to as the third wave of coffee, they care deeply about the entire chain of the coffee production. Having realized that in this relationship, from the farmer to the roaster and all the way to the barista, the chain is no stronger than its weakest link. The other Coffee Collective locations are Torvehallerne, Gothåbsvej, and Bernikow in the inner city of Copenhagen.
Espresso Soft Serves in the Summertime
Summertime is the best time in Copenhagen, also at Coffee Collective. Around May, you can expect the espresso soft-serve to reappear on the menu, and it will probably stay until September unless the weather is really bad. The soft ice is everything you’d expect it to be from the photo. Silky smooth texture, ice-cold cream, with a mild taste of espresso and milk flavor, gently enhanced by the dust of coffee grounds on top. Now, I can never visit Copenhagen again without having it.
Celebrating the 10th Anniversary
On February 15th 2018, the Coffee Collective will celebrate their 10th Anniversary by selling all cups of coffee for DKK 10 but with the option of paying whatever you want. All proceeds will be donated to their coffee producer Kieni in Kenya. I’m definitely going – are you?
