CureModern Irish Tasting Menu by Chef Andrew Walsh
Cure means to to take care of and that is exactly what Chef Andrew Walsh aims to do with his flagship restaurant. We didn’t expect to try modern, elevated Irish cuisine for the first time in Singapore, but Chef Walsh does a great job of balancing local flavors with his Irish roots. Our favorite dish at restaurant Cure was the white asparagus with burrata ice cream, caviar, and Parmesan custard. They also have natural wine at Cure – in fact, we had a bottle of Gut Oggau Winifred with our dinner. Save room for the Basque cheesecake with hay smoked ice cream. Further proof of the current Basque cheesecake trend.

Three snacks (clockwise from front): 1) Beet-cured salmon roll, wasabi & trout roe. 2) Tuna tart with bonito mayo. 3) Cigar – eel with burned corn hair.The best dish – white asparagus, burrata ice cream, charcoal cracker & caviar.

Baby sweet corn with quinoa and chives and cod mousse with buckwheat and crushed prawn head.
