Novel

Located in Aarhus, Denmark is Novel, a new restaurant from Rikke Storm Overgaard and the team behind Moment. Novel serves a tasting menu based on greens and vegetables from their farm, as well as seasonal shellfish and game meat. Restaurant Novel’s name stems from their goal to present “a novel approach to sustainable gastronomy.” From their website: “We seek transparency and to leave a positive climate footprint. Our work is inspired by nature and directed by knowledge.” Head chef: Alexander Johnsen (Falsled Kro, Domestic, Miró, Treetop). Restaurant manager: Mathias Breinholt (Moment).
