Located in the heart of Stockholm, Sweden is Brutalisten, an experimental restaurant from artist Carsten Höller in collaboration with chef Stefan Eriksson with a focus on one-ingredient cooking. In the brutalist kitchen, there is a commitment to pure ingredients, as only one ingredient is used in each dish. Höller’s manifesto indicates that only water and salt may be used in addition to the ingredient, but it may be cooked in various ways to showcase different properties of the ingredient.
