Located in Vesterbro in Copenhagen, Holly is a restaurant with a focus on fresh, organic, and sustainable ingredients, primarily fish and vegetables, with á la carte options as well as a daily five-course menu. The two chefs are Anton Hedegaard (previously sous chef of Svinkløv Badehotel) and Eigil Bundsgaard Jensen (previously of Frederiksminde, Pomlenakke, and Chambre Séparée in Belgium).
