Kristian Baumann is back with a pop-up restaurant inside the Empirical distillery on Refshaleøen called Koan x Empirical. There will be an 11-course tasting menu inspired by Baumann’s South Korean roots and Nordic ingredients. A wine pairing, non-alcholic pairing, and a cocktail pairing curated by Empirical will be available. The first day of service will be on October 8th, and it will last until the end of 2020. Update: Koan is currently operating in the old venue of Relæ throughout 2021, and then will open in a permanent location on Langelinie pier.
