Restaurant Relæ is a New Nordic restaurant from Italian chef and Noma alumni Christian Puglisi. Head chef Jonathan Tam has a unique style of cooking and follows Puglisi’s philosophy of being as close as possible to 100% organic and sustainable. While not an easy task, Puglisi and his team have made great strides with initiatives like their Farm of Ideas as well as their Seed Exchange program, which have both involved the global food community and helped spread knowledge about these topics to the industry. These efforts awarded them a top score in the 360 Eat Guide in 2019. After 10 years, Relæ will be closing at the end of 2020. Manfreds will also be closing, but don’t worry – Bæst, Rudo, and Mirabelle (bakery and eatery) will remain open.
