Located in the Hällsnäs Hotel in Mölnlycke, Sweden (outside of Gothenburg) is Signum, a fine dining restaurant from chef Thomas Sjögren serving a seasonal tasting menu inspired by the four elements: earth, wind, fire, and water. They grow their own vegetables and work with local fishermen and suppliers to provide them with the other ingredients. Sustainability is at the core of the project.
