Summertime, and the living is easy in Copenhagen. The next few months are when the city really shines. Copenhagen is bursting with good energy during the summer, probably because the city has sunlight until almost ten p.m every day. Sunshine season, baby! Strawberries are starting to hit the menus in restaurants which means only one thing: summer is officially here. Keep reading to see a list of the exciting new openings, events, pop-ups, and collabs happening this month in Copenhagen.

Gorda x Rosforth Pop-Up – June 1st

On Wednesday, June 1st, Gorda will be hosting Argentinian winemaker Santiago Salgado from Las Payas in Mendoza for a one-night only pop-up together with Rosforth and Rosforth. There will be Argentinian food, wine, and, of course, empanadas. Click here to book a table.

Ripotot – June 1st

Located in the city center of Copenhagen is Ripotot, a French-inspired restaurant from Mikkel Toftgaard Gregersen serving seasonal food and natural wine. The place will be cozy, with only 40 seats, and will open on the first of June. Click here to book a table.

Balthazar Chef’s Social Hours – June 2nd

Francis Cardenau and Jakob De Neergaard (Marchal) are teaming up to host a social hour party at Balthazar. Drop by between 18:00 and 20:00 for some canapés and Champagne. The food is free, the drinks are not. Click the post below for reservation information.

The Cookie Aisle – June 5th

Copenhagen’s best cookies are not found in one of the city’s best bakeries, but in a pop-up from Helen Fodnæss. This American/Norwegian home baker churns out a few varieties of American-style cookies; our favorites are “the original” (chocolate chip with roasted hazelnut) and the “snickerdoodle riff” (with brown butter and cinnamon). Grønt Marked – June 5th and June 19th

On the first Sunday of every month (from May until December), you’ll find the city’s biggest farmer’s market, Grønt Marked, pop up on Refshaleøen. Shop organic vegetables, ciders, kombuchas, kimchi, ferments, and so much more. Now, the market also has expanded to Nørrebro – find your favorite farmers at Guldberg Byplads next to Rondo on the third Sunday of every month as well.

Janice – June 8th

Opening on June 8th in the Vesterbro neighborhood of Copenhagen is Janice, from Marc Van Hauen (former assistant restaurant manager of Uformel) and Frede Madsen (former chef at Pluto, Gorilla, No. 2, and Uformel). Janice is a small wine bar and restaurant serving a mix of natural and classic wines from importers like Osterreich Vin, Lieu Dit, Rosforth & Rosforth, Pétillant. On the menu will be small, seasonal plates with inspiration from all over the world.

Caribbean Housewife Roast – June 8th

The Caribbean Housewife Roast returns on June 8th at the Kitchen Collective on Slagtehusgade 11A. This evening is a special winemaker dinner with La Villana (a female natural winemaker from Lazio, Italy). There will be a four course vegetarian menu with a wine pairing. Fruit de Mer Lunch at Silberbauers – June 12th

On Sunday, June 12th, Silberbauers Bistro will be serving a special fruit de mer lunch with live jazz music and lots of fresh seafood dishes. The price is 450 DKK per person. Click here to book a table.

Sushi Sho x Ruby – June 19th

Michelin-starred restaurant Sushi Sho from Stockholm is taking over Ruby cocktail bar on Sunday, June 19th serving sushi. The price to attend is 1000 DKK for the omakase menu. Drinks will be available featuring Suntory Roku Gin. Limited seats are available. Click here to book a table.

Alejandra Espinoza x Hija de Sanchez – June 19th

The next “Amigos de Sanchez” event at Hija de Sanchez Taqueria in Kødbyen will take place on Sunday, June 19th. Chef Alejandra Espinoza from Somos Restaurant in Ecuador will be the guest chef for the day and serve some extra special tacos! Open from 12:00 until sold out.

Miyazaki x kōnā – June 21st-22nd

On Tuesday, June 21st and Wednesday, June 22nd, there will be a two-day special takeover at kōnā. Japanese chef Takashi Miyazaki from Michelin-starred restaurant Ichigo Ichie in Cork, Ireland will be taking over the counter to showcase his nine-course kaiseki menu. The menu costs 950 DKK a person. A sake pairing is also available. Click here to book a table.

Ugly Duck Brewing x Hotel Mayfair – June 24th

Ugly Duck Brewing Co. has teamed up with Hotel Mayfair (The Hungries’ hotel partner) to open a Miami Vice-themed beer lounge inside the Vesterbro hotel. The official opening is on Friday, June 24th at 16:00 CEST, and the first 100 guests will get a free draft beer.

Pétillant x Hos Fischer – June 24th-25th

On Friday June 24th and Saturday June 25th, Pétillant Vin Import is taking over the Italian restaurant Hos Fischer. There will be charcuterie, bread from Juno the Bakery, cheese from La Fromagerie, and “a wine list you didn’t dare to dream of.”

Studio Pop-Up at Tivoli – April 20th-June 27th

Chef Christoffer Sørensen and the team from Studio are taking over the Japanese Tower in Tivoli for a few months this spring. They will serve a nine-course menu with a focus on Danish seafood and spring produce, as well as some fermented ingredients. Click here to book a table.

Summer Restaurant in Kulturtårnet – June 1st-August 27th

The summer restaurant in Kulturtårnet (the Culture Tower) returns to Knippelsbro this June until August, serving natual wines from Rosforth & Rosforth and a four-course dinner highlighting local vegetables and fish.
