Juno the Bakery

Our favorite pastries in the world are not found in Paris but in Copenhagen – at Juno the Bakery. Swedish-born Emil Glaser, a former Noma chef, and his team of bakers have perfected the art of pastry – Juno’s croissants are buttery, laminated things of beauty. But perhaps their most impressive treat is the Swedish cardamom bun, a light and airy miracle that’s fluffy, buttery, and oozing with cardamom and sugar. But don’t leave without trying the almond croissant – it’s like a warm cookie, still soft and slightly underbaked on the inside, with croissant layers on the bottom, a rich almond filling, and a perfect texture of sliced, toasted almonds on top. We also adore the overwhelmingly aromatic vanilla bun, the laminated brioche with marinated strawberries, and the seasonal cream bun. The best part? Juno bakes their pastries all day long, so they never sell out – and they’re pretty much guaranteed to be warm and fresh from the oven. This is not a place to hold back – you’re going to want to order the whole pastry case. We’d be lying if we said Juno wasn’t a huge factor in our decision to move to Copenhagen.

Sinne Gas Bageri

Sinne Gas is a self-service bakery in Østerbro with no social media, website, or phone number – but this hidden gem is one of Copenhagen’s best bakeries. Come here for the sinfully delicious brunsviger – it’s the best we’ve ever had. It has a soft, doughy cardamom base and looks like a dessert focaccia, with fingerprint marks pressed into the dough. It’s oozing with “snask” – the brown sugar caramel that pools in those pockets – greasy, sugary, sweet heaven. Sinne Gas also serves the best BMO (“bolle med ost”) in town. Often fresh from the oven, the butter melts into the spongy sourdough and the cheese fuses to the bread, melting almost like a grilled cheese. With a uniquely crunchy edge and a chewy, gooey center, it’s simply unbeatable.

Københavns Bageri

The founders of the popular neighborhood bakeries Benji and Alice, Rasmus Sjødahl and Anders Lorenz, teamed up to open Københavns Bageri in Carlsberg Byen. Inspired by Danish baking history and traditions, Københavns Bageri serves modern versions of old-fashioned treats. Whether you’re craving a bit of nostalgia or just looking for something buttery to satisfy your sweet tooth, this is one of the best bakeries in Copenhagen, serving exceptional sourdough bread and pastries. One of our favorite items is the vanilla spandauer, which is so speckled with vanilla that it tastes like biting into a crème brûlée. The lamination here is impeccable, with layer after layer of buttery perfection. Be sure to try a slice of the kringle – a layered pastry filled with almond remonce, prunes, macarons, and cardamom. Their company, Earnest Eats, comprises a small chain of independent cafés and bakeries where you’ll find their pastries: Benji in Nørrebro, Alice in Amager, and Sneezing Fruits in Islands Brygge. They also have a small-batch ice cream shop, Aurora Ismejeri, with locations in Carlsberg Byen and Papirøen.

Goose

At Copenhagen’s most unique bakery, you won’t find cardamom buns – instead, you’ll find Asian twists on classic Danish pastries, like a sticky rice spandauer or a five spice swirl. Baijie Curdt-Christiansen and the Foo Ferments team set out to create a deli and bakery that brings some of the flavors they miss from Asia to Scandinavia. Our favorite was the kaya croissant – a buttery, perfectly laminated pastry filled with coconut jam and a slab of butter. This was sweet, salty, and oozing kaya butter – we’re so happy to see more pandan in Copenhagen! We also loved the five spice swirl, which tasted like a slightly savory cinnamon roll with notes of star anise and cloves, and the ginger scallion snurre, a buttery swirl glazed with sweet soy sauce. For lunch, try a sando – one option combines sweet tomato sauce, fluffy eggs, pickles, and ginger mayo on the softest milk bread, while the spicy wonton sando comes with a pork sausage patty, chili crisp, and a crunchy wonton cracker. Goose also doubles as a deli – they make their own soy sauce, chili oil, and kaya butter, all available for purchase alongside rice, coffee, and other provisions.

Kong Hans Bakery

Chef Mark Lundgaard of two-Michelin-starred restaurant Kong Hans Kælder has opened a bakery on Øster Farimagsgade serving modern twists on French and Danish bakery classics. We loved the drømmekage (“dream cake”), which is almost 50/50 vanilla sponge cake and coconut brown sugar topping, and the kartoffelkage (“potato cake”), a choux pastry filled with the most decadent, slightly salty vanilla cream, covered in a chocolate blanket. Don’t miss the salt and pepper bun, a sourdough bread roll covered in sesame, poppy seeds, salt, and pepper. It tastes like an everything bagel! Best of all, they lather it with a generous amount of the world’s best butter, Beurre Bordier, and slices of aged Comté. This is one of the best BMOs in town! Kong Hans has also installed a “hole-in-the-wall” bakery window right outside the Michelin restaurant on Vingårdstræde with a selection of their most popular items, including laminated pastries, sourdough bread loaves, patisserie treats, sandwiches, and even pâté en croûte.

Bageriet B

Located in Nørrebro, Bageriet B is a bakery from Sam Little (formerly of SMK Kafeteria and Mirabelle). The concept is a responsible bakery – the shop focuses on local and organic ingredients, and strives for zero waste. On the menu are sourdough breads, laminated pastries, and cakes. One unique offering at Bageriet B is the harissa croissant, but our favorite savory item is the Onion Dream, a circular pastry with an intense cheesy filling and caramelized onions. Bageriet B’s spandauer is one of the best in town. Croissant dough is filled generously with custard and studded with fragrant vanilla. The lamination here is really high quality, and you can clearly taste the butter in the dough. Bageriet B serves coffee from Coffee Collective – we especially loved the vanilla latte made with Sotøfte milk and syrup made in-house from spent vanilla beans.

Riviera

Riviera is a contemporary Italian-inspired café, bakery, and eatery from chef Chiara Barla, who also owns Apotek 57 and Lido. Our favorite pastry here is the cardamom bun – a sticky, syrupy, layered swirl oozing cardamom flavor between moist, buttery layers. We also enjoyed the stunning seasonal spandauer, with apple slices fanned into a beautiful rose atop a vanilla cream. With a generous custard-to-croissant ratio, it just might be the best spandauer in town. Riviera also offers a full menu of breakfast and lunch items, like fluffy buttermilk pancakes (with sweet or savory toppings), French toast, and egg dishes served with toasted sourdough bread. To drink, there is coffee from La Cabra.

Lille Bakery

Situated in Refshaleøen is Lille Bakery, a cozy bakery on the outskirts of Copenhagen. When you see the surrounding area and building, you might ponder about the strange choice of location. That’s before you realize the closest neighbors are restaurant Noma, La Banchina, Reffen Street Food, and Alchemist. Lille Bakery is a great place to have breakfast or early brunch, and you wanna get here early before they sell out of their famed sausage rolls. Don’t miss the Berliner doughnut or their take on a cardamom bun – a buttery pastry swirled into a roll and covered in cardamom sugar. Their brioche bread with mascarpone and pickled plums reminds us of Sqirl in Los Angeles, and their whole wheat sourdough bread is one of our favorite loaves in town.

Andersen Bakery

Andersen Bakery is a spot that tends to fly a bit under-the-radar in the Copenhagen bakery scene, but this Japanese/Nordic bakery in Islands Brygge took the number one spot in our 2021 Semla + Fastelavnsbolle Guide! Andersen showcased impressive technique and pastry skills, and gained creativity points to the max with their eye-catching presentations of their luxurious fastelavnsboller. All had a buttery croissant bottom, were filled with a jam or spread of some kind, topped with a flavored cream, finished with a crispy, buttery cookie lid, and dusted with some kind of powdered sugar – the rhubarb jam, vanilla cream, and raspberry powder variety was our favorite. It should also be noted that Andersen Bakery bakes the signature potato buns for our favorite burger joint in Copenhagen, Gasoline Grill. Andersen has expanded with a second location in Ørestad, next to the Bella Center metro station.

Hart Bageri

Richard Hart, formerly of Tartine Bakery in San Francisco, joined forces with René Redzepi of Noma to open a sourdough bakery in Copenhagen. In addition to the bread at Hart Bageri, they also serve a variety of pastries that change seasonally. Our absolute favorite is their take on a cardamom bun, which is made using leftover croissant scraps and lots of extra butter, so it caramelizes like a kouign amman. Another delectable pastry is the drømmekage, a twice-baked “dream cake” croissant with coconut, brown sugar, and caramel. Hart Bageri also serves international dessert favorites like a Basque cheesecake, Italian panettone for Christmas, and Danish kransekage for New Year’s Eve. Hart has expanded to become a substantial bakery chain, with a dozen locations spread out across Copenhagen – and more opening every month.
